Herbed Potato Salad

Food Service Version

Yield
60 1/4 cup servings

Ingredients
5 lbs red or yellow potatoes, scrubbed and diced
1 ½ tsp salt
1 cup mayonnaise
1 cup plain yogurt
½ cup finely chopped onion
4 Tbsp dijon mustard
1 tsp ground black pepper
2 cups chopped fresh herbs
4 scallions, sliced

Directions
  1. Steam potatoes and cook until tender (12-15 minutes). Remove cooked potatoes, sprinkle with 2 tsp salt, and let cool.
  2. Whisk mayo, yogurt, onion, mustard, pepper, and remaining salt in a large bowl.
  3. Add the potatoes, herbs, and scallions, stirring well to coat. Serve at room temperature or refrigerate to chill.

Home Version

Yield

10 servings (3/4 cup each)

Ingredients

2 ½ lbs red or yellow potatoes, scrubbed and diced
¾ tsp salt
½ cup mayonnaise
½ cup plain yogurt
¼ cup finely chopped onion
2 Tbsp dijon mustard
½ tsp ground black pepper
1 cup chopped fresh herbs (like parsley, dill, and tarragon)
2 scallions, sliced

Directions
  1. Bring 1-2 inches of water to a boil in a large saucepan or pot with steamer basket. Add potatoes, cover and cook until tender (12-15 minutes). Remove cooked potatoes, sprinkle with ¼ tsp salt, and let cool.
  2. Whisk mayo, yogurt, onion, mustard, pepper, and remaining salt in a large bowl.
  3. Add the potatoes, herbs, and scallions, stirring well to coat. Serve at room temperature or refrigerate to chill
